Ingredients
Robert Chicken Luncheon Meat, in cubes
2 aubergines
4 tomatoes
2 onions, in squares
2 peppers, in cubes
Curry, cumin, salt and pepper
Oil
Preparation
Roast aubergines and tomatoes in the oven at 200º C.
Peel the aubergines and tomatoes.
Fry onions with curry, cumin, salt and pepper.
Cut aubergines and tomatoes into cubes and add salt.
Fry peppers.
Serve the dish on a plate and add Luncheon Meat.
Enjoy with yoghurt that is mixed with garlic and salt.
